Возможно вам стоит просмотреть еще man страничку по команде dmenu
Ладно, я сейчас сама попробую вашу строчку меню, правда я сейчас не на дебиан, возможны несоответствия

У меня все работает отлично. Поменялась цветовая схема меню. А вы когда вствляете эту строчку, старую обязательно закоментируйте

А где ее взять старую,когда в конфиге только одна добавлена новая.Для окон все темы работают

А вот для д-меню что то пошло не так

Вот я намеренно сделала ошибку в конфиге и перезагрузила его. Вышла ошибка в шапке заголовка с кнопкой "показать ошибку"
В текстовом редакторе ясно видно в какой строчке я была не права. Не могу найти как вставить скриншот. Сейчас попробую разобраться

в настройках i3status. это может быть для всех пользователей, либо для конкретного пользователя.
если для всех - то в /etc/i3status.conf
если для конкретного, то в /home/<user>/.config/i3status/config

Внимательно посмотрите конфиг и все найдете.

Для этого существует i3 gaps. Данного пакета в официальном хранилище Дебиановских пакетов нету. Нужно компелять. Затея так себе...овчинка выделки не стоит.
