По логам вроде нормально установилось.
А чем не хватало из репозитория open-vm-tools ?

С ним буфер обмена между хостом и гостем не хочет работать

Проблема решилась. Надо было перед установкой удалить open-vm-tools с помощью apt purge, а не apt remove
